1 egg, slightly beaten
1 15 oz. can each whole kernel and cream style corn
1 cup sour cream
1/2 cup melted butter
1 cup plus 1/2 cup grated cheddar cheese
1/2 cup onion, diced
1 8 oz. package corn muffin mix.
Preheat oven to 350 degrees. Grease a two quart casserole. In a large bowl combine all ingredients, except cup cheddar.
Mix until well combined. Pour into prepared casserole. Bake for 50 minutes or until a knife inserted off center comes out clean.
Remove from oven sprinkle remaining 1/2 cup of cheddar on top.
Return to oven for five minutes or until cheese melts. Let cool slightly before serving. ( 4 servings )
